Mom’s Banana Cake

imageMy mom made this all the time when we were younger. Just the sight of overripe bananas reminds me of this sweet, moist breakfast treat.

  • 2c flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 3/4 c shortening or vegetable oil
  • 1/4c milk
  • 2 eggs
  • 1 tsp vanilla
  • 3 bananas
  • 1 1/2c sugar (1c for less sweetness)

Combine sugar and oil and eggs, mix. Combine remaining wet ingredients, then dry. Bananas last. Pour into greased pan.

350 degrees for 20-30 minutes.
