Healthier Banana Oat Muffins

My friend Vanessa sent me this recipe. She is gorgeously tall and lanky so I am willing to do and eat pretty much whatever she says.

  • 1/4 cup milled flax seed
  • 1 cup oat flour (I blend oats in my Blendtec)
  • 1/2 cup whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg, beaten
  • 1 1/2 cups mashed bananas
  • 2 T veg. oil
  • 1/2 cup milk
  • 1 tsp vanilla
  • dash cinnamon
  • 2 T nut butter
  • 1/4 cup plain yoghurt
  • 1/4 cup chocolate chips (optional)

Blend dry ingredients in a bowl. Make a well in the center, and combine egg, vegetable oil, and milk. Stir until just blended. Fold in bananas. Fill well greased muffin cups or papers. Bake at 400* for 18-20 minutes or until muffin top springs back when touched. Yield: 12 muffins. You might want to double this recipe…
