Banana Cake

My mom made this all the time when we were younger. Just the sight of overripe bananas reminds me of this sweet, moist breakfast treat.

  • 2c flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 3/4 c shortening or vegetable oil
  • 1/4c milk
  • 2 eggs
  • 1 tsp vanilla
  • 3 bananas
  • 1 1/2c sugar (1c for less sweetness)

Combine sugar and oil and eggs, mix. Combine remaining wet ingredients, then dry. Bananas last. Pour into 9″x13″ greased pan. Could also be baked into 24 muffins. Using a loaf pan requires quite a bit more time, and I don’t like the way the edges get very cooked and the middle is a little raw.

350 degrees for 20-30 minutes.
