Chocolate Chip Oatmeal Cookies

Back in the days when I would bake more often (before kids), I would make these chewy cookies without chocolate chips. The texture is phenomenal! 3K AllRecipes.com reviewers agreed. I tweaked it because I thought the original recipe had too little flour and my cookies were too flat. This article helped me figure out what ingredients would help me make the perfect cookie.

Ingredients

  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups old fashioned oats
  • 1 cup semisweet chocolate chips or butterscotch chips or dried cranberries

Directions

  1. Preheat the oven to 325 degrees Fahrenheit.
  2. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth.
  3. Beat in eggs one at a time, then stir in vanilla.
  4. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended.
  5. Mix in the quick oats, walnuts, and chocolate chips.
  6. Drop by heaping spoonfuls onto ungreased baking sheets.
  7. Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

When I want a smoother consistency without the oatmeal, I go for Chocolate Chip Cookie Bars. When I have time to actually make the cookie version and patience to wait 10 minutes for 12 servings at a time, I actually make Chocolate Chip Cookies. And when I want a straight up sugar rush without the caramelized flavor of the brown sugar, I am all about these Frosted Sugar Cookies, sometimes with frosting for holidays.

Drool.
