“Crack Corn” – Caramel Puffcorn

My cousin Kathy gives a jar to everyone at Christmas time and calls it “Crack Corn” – very appropriately so – because it is so addicting. Sweet, crunchy, fluffy, light, salty… easy to pop into your mouth, over and over and over again until it’s all gone!
Bring to a boil:
  • 2 sticks of butter (1 cup)
  • 2 cups light brown sugar
  • ½ cup white karo syrup
Boil for 2 minutes. Then Add:
  • 1tsp vanilla
  • ½ tsp. baking soda
Pour over 2 ½ bags of Chester’s Puffcorn butter flavor – blue bag
(Stater Bros. and Albertsons usually carry it)
Place on 2 cookie sheets bake @ 250 for 1 hour, stirring every 15 minutes
Cool on wax paper.
