Instant Pot Taro Tapioca

This dish is also known as Taro Sago Pudding, a common Indonesian dessert. My friend Vanessa found the recipe and I love the creaminess of the coconut milk with the starchiness of the taro. Adjust the sweetness as needed!

Quick Instructions

  1. 1/4 cup tapioca pearls (UPDATE: No soaking tapioca required!!). Place tapioca in instant pot.
  2. Add 2 cups taro cut into cubes, 1 cup of coconut milk, 2 cup of water, and about 1/4 cup of rock sugar.
  3. Cook on manual for 10 minutes (high pressure).
  4. Wait 5 minutes before quick release and enjoy.
