Special thanks to V for this special recipe, who learned it from her grandmother. She prepared it with chicken thighs cut into bite sized pieces and it was delicious – rich with flavors but not very spicy (though I think it would be very tasty with red chili flakes). This is one of those recipes she makes weekly for her boys. And it has become one for me as well!
Some of the reasons I love this dish:
Marinate the meat ahead of time – or don’t! It is obviously more flavorful when marinated an hour or so, but with dark meat there is no concern about the meat not being tender, so it’s a great dish when you are short on time.
Super versatile. I love the sauce that develops with the dark meat, but V tells me that it can be used on fish, beef, tofu…
Watching your calories? I’ve cut back on the butter marinade and it still has a lot of flavor from the spices.

Marinade
Spice Mix
2Tbmelted butter
2-3shallots chopped
3-4clovesgarlic chopped

1/2-1thumb grated gingeroptional
Instructions
Combine Marinade ingredients and butter into meat.
Marinade or prepare immediately.
To cook, sautée in pan with oil over high heat until browned.
Serve over rice or salad.
